All the people who know me, know I’m a little kid. Asanas is just a game for me. AcroYoga is a big playground. So as a kid, I like kids food as well. Especially pancakes. But I like health food at the same time. So why not combine it? These healthy pancakes will give you everything you need. One of the best things you can do for your body is combining grains with legumes. That’s real power food. And that’s what this recipe is about.
And if you have kids, who don’t want to eat their vegetables, this is the ‘secret’ way to give them some. Just blend some zucchinis through the batter and they get all they need, without knowing.
So what you need is:
-lentils (I like the red ones, soaked overnight)
-rice milk (water will do)
-buckwheat flour (well, that’s the one I use)
-pinch of salt
-pinch of turmeric
-pinch of ginger
-what ever you want to throw in as well: zucchini, carrot, salmon
Soak the lentils overnight. Next day rinse them and cover them and set a side up until needed.
When you’re ready to make the batter rinse the lentils one more time. Throw them in the blender, add the eggs, rice milk, veggies and herbs and blend until smooth. Add the flour and blend one more time till it’s the same thickness as with normal batter.
Now all you have to do is bake pancakes like your use to do. (If you use a lot more lentils than flour the pancakes are more ‘breakable’ than normal ones).
All you have to do now is enjoy.
