Green bean coconut curry

Coconut curry with green beans

It’s Boulevard in Den Bosch this week (6 up until 16 August 2015); a theater festival. Tonight is the opening and Ingrid and I are going. I promised her to make diner; whatever she wanted. She asked for green beans. I’m not a big green bean fan, but I came up with this curry which I really liked myself. Luckily Ingrid loved it.

Ingredients

  • Rice of quinoa
  • Green beans
  • Cherry tomatoes
  • Sun-dried tomatoes
  • Zucchini
  • Red capsicum
  • Almonds
  • Oil (for baking)
  • Sunflower seeds
  • Oyster mushrooms
  • Coconut milk
  • Herbs: turmeric, curry powder, salt, pepper, grounded cumin and cilantro

Preparing

It’s a simple and fast recipe to make. Prepare the rice or quinoa the way you are use to. Cook the green beans for a few minutes. I normally put a strainer in the pan with rice and put the green beans in there for a few minutes. They should still be hard when you take them out.

Now start preparing the curry. I like to use a tajin, but you can use a casserole as well. Start with the oil, add turmeric, curry powder, salt and pepper and mix. Add coconut milk and stir again. Now add the chopped cherry tomatoes, zucchini, red capsicum, oyster mushrooms and green beans. Let it simmer for a bit. Make sure you have enough coconut milk in there. Finally add the sunflower seeds, sun-dried tomatoes and almonds. Taste it and add some more spices if you desire.
