This basic pasta salad is one of the pasta salads I make most. It’s so easy, quick to make and handy to take with you. I prefer not to eat (much) bread because my stomach doesn’t like gluten, so this pasta salad is a good substitute. I make it with gluten free pasta, up to you what you choose.
- Little tomatoes
- Basil leaves
- Mozzarella cheese or blue cheese
- Stock (without sugar)
- Cook the pasta the way you use to do, but add the stock. I always add stock to give my pasta a bit more taste. I prefer to use stock without sugar or milk powder added to it.
- Cut the tomatoes and capsicum in little parts and do the same with the mozzarella cheese. If you like more bite to your salad you can use blue cheese as well. Squeeze the lemon in a cup, add mustard and honey and stir.
- When the pasta is ready let it cool of a bit and add the mozzarella cheese. Stir around. The cheese will melt a bit and get stuck to the pasta. Add pepper, salt, tomatoes and capsicum and stir again. Add the honey-mustard-lime dressing and tear the basil leaves and mix the pasta one last time.
Besides putting blue cheese in instead of mozzarella cheese you can add salmon or smoked chicken as well.
